The Story Behind Albrightsville Tavern

Sometimes the best ideas come when you finally slow down.

All three of us — Chef Brian, Frank, and Byron — were feeling it. Burned out. Overbooked. Overcooked, in Brian’s case. So we did something rare: we hit pause and planned a getaway in the Poconos. Just three friends, a rented cabin, and a cooler full of good brews.

Executive Chef Brian had just stepped away from a whirlwind culinary career spanning NYC hotspots and off-the-grid food spots all over the US & Europe. The burn-out was real, and this getaway was just what he needed.

The days were peaceful, surrounded by nature, and smoke from the grill curling into the mountain air. But at night? We ran into something we didn’t expect — every bar in the area closed early. And not just a little early… like, “game’s still on, beer’s still cold” early.

One night sitting by the fireplace and telling old stories, we cracked open some of Byron’s craft brews and played poker around the cabin table. That’s when the conversation shifted. We remembered a shuttered old bar we’d passed earlier in town — dusty, dark, and full of potential. One of us joked, “We should buy that place and do it right.”

The joke didn’t last long.

By midnight, Brian was drafting menus on napkins, and tap and cocktail lineups were being imagined by Byron on the back of coasters. Frank, a long time entrepreneur — and ever the visionary — was already imagining a unique tavern like no other.

In that moment a vision was born: A tavern that celebrates flavor, fosters community, and serves as a true gathering place in Albrightsville.

That night, the spark was lit.
